Stephanie's Zucchini Bread
preheat oven to 325, grease and flour baking pans

3 cups flour (sifted)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon

3 eggs (beaten)
3 1/4 cup sugar
1 tbsp vanilla extract
1 cup veg. oil
2 cups shaved zucchini (easy to use a peeler to shave with)
1 cup finely chopped walnuts

combine dry ingredients and set aside
cream eggs and sugar, then add other wet ingredients
stir dry into wet, then add zucchini and walnuts
40 minutes in the oven, cool and top with sifted powdered sugar
(The kids will have no idea that veggies are in it- try with old bananas if no zucchini)


Perfect potato salad
1 bag red bliss potatoes (only peel the eyes off)
quarter potatoes
boil until firm but tender (wait until the skin starts flaking just a bit)
drain and remove all the excess water (very important)
salt and pepper the potatoes to your liking
1/2 jar of your favorite mayo (Dan likes hellmanns light)
chop finely 3 celery stalks and 1/2 an onion
mix them in and let it chill for 2 hours

2 hard boiled eggs, chopped up crispy bacon, and fresh parsley (Stephanie likes fresh dill in there) will add tons of flavor, but if you are short on time, go with what you have!







Dan Mahoney's Squash from Heaven

2lbs of squash boil and dry with paper towel to remove excess water
Mash together squash with
1/4 cup butter
1/8 cup milk
1/4 cup brown sugar
1 tsp of cinnamon
salt and pepper for tast
Place mash in baking dish for 20 min at 350



OYSTER STUFFING  
Strictly "Creole". 3 lg. onions, chopped fine 8 sm. pieces garlic, minced 1 1/2 c. celery, minced 6 jars oysters, save the liquid in which the oysters come in 2 loaves French bread or 1 "poor boy" loaf, broken in small pieces & soaked in the oyster water, while you are fixing the rest of this recipe 1 box Italian bread crumbs 1 lb. bacon, cut in sm. pieces & fried & then crumbled up Salt & Pepper to taste 1/2 tsp. powdered oregano 1/2 tsp. powdered sweet basil 1/4 tsp. powdered thyme

Mince all of your seasons and place them in separate bowls. Fry bacon first and when it is done, remove it to a large bowl. Fry all seasonings INDIVIDUALLY, and remove them each to the large bowl in which the bacon is.

Cut oysters in about 3 pieces each, and fry only until their edges start to curl. Remove from frying pan and place in the large bowl with everything else.

(There will be a lot of creamy water in the frying pan after you fry the oysters - do not throw it away - but next add your bread, which has been soaking in the oyster water while you have been doing all of the above things. Heat the bread in the oyster water until it is heated completely through, stirring constantly as this will burn quickly if you don't and will stick to the frying pan. Fry bread until all of the oyster water is absorbed. Add the bread to the rest of the mixture in the large bowl, add salt and pepper to taste. Add powdered spices next, add bread crumbs until the stuffing is the right consistency you want it, not too stiff and not too soft and runny. Pour this complete mixture into a large greased casserole dish, and top with a light layer of more Italian bread crumbs, and dot with small pieces of butter.

Bake in a 350 degree oven for about 25 to 30 minutes until casserole is bubbly.

Makes 8 to 10 servings.

NOTE: Always serve cranberry sauce with oyster stuffing.

I always cook my stuffing in a casserole dish, rather than cooking it in the turkey or chicken. If you must put something in turkey or chicken, cut up some pieces of celery and onions and bell pepper and cook them in the fowls.




"Dan Mahoney's Chicken Surprise
"

4 small pieces of chicken breast (perdue packs)
fat free olive oil spray cook lightly on one side flip chicken over and season
(montreal steak seasoning and a tsp of salt) cook 2 min.
Add half a cup of water and simmer til cooked
(aren't you simmering the seasoning off of the chicken?)

"The Best Steak Marinade Ever Made"

(We don't Joke, this is seriously good and will impress at any BBQ or Tailgate)

1 Container of Sweet Baby Rays BBQ Sauce
1 Cup of Italian Dressing
2 Tbsp Worcestershire
sauce
2 Tbsp A-1
2 Tbsp soy sauce
2 Tbsp Spicy Mustard

Get a big Ziplock baggie and throw your
Steak tips in with all of the above ingredients. Make sure the sauce is mixed well and thoroughly coating all of the meat. Push all air out of bag and lie flat in your fridge. In a couple hours flip bag! Try to marinade for at least 4 hours! (20 Min. is still good I know sometimes we don't think ahead)
